I'll be putting my favorite in sets because of their similar look:
1. StockUI, SuperClassic - uses Blizzard art
2. Qulight UI, Mono UI, Skaarj UI, The Thunder UI - each seems to function the same
3. Elv UI, Duffed UI, Dajova's UI, SupervillainUI – all based on low memory Tukui
4. FreeUI, cleanUI - homage to the great ALZA UI 
Also have to say props to my personal favorites:
RealUI – HUD look
caelUI - low memory, built-in dps, threat, combat log
ShestakUI - pixelfont-based UI
Supervillain UI: 2 - Tukui with a comic book look
Roth UI - Diablo!
I love Qulight UI ^^ I tried many similar ones like it, but I play on a laptop so I'm limited to some UI, unless I wanted to spend ages recustomizing them or scaling my UI so much so that I couldn't read any text 😛 And Qulight UI was purrrrfect. But I'll have a looksie at those other UIs when I get home too 🙂
I've never been able to find a UI that...satisfies me. <Insert Drach comment here> My UI is close in terms of useability, but I just can't get it to look purty. I'll have to search through the ones you recommended 🙂
I use RealUI 90% of the time now. I just add Addon Control Panel to create several addon sets for solo, party, raid, and trade.
The HUD look may not be for everyone though.

I used to use LUI, but I decided I didn't need a fancy schancy looking UI and wanted something minimalist, so I basically took everything but buffs, mini-map, Quest Log(When needed), chat, grid(when grouped), Omen(again, only visible while grouped and in combat), recount off the screen, instead of health bar's I just have the numbers floating beside my ForteXorcist spell timers(Which of course are only setup to monitor spells that need monitoring, such as DoT's, CD's and short duration buffs), so much more screen space now, it's amazing.
@Renegade If you haven't yet, try Gar's UI... similar mix of addons as yours in a minimalist setting.
@Gar Really sorry I didn't include you in my list. Though we are both on Macs, the UI just won't work with my system. I'll try again soon!
Well, 4.0.6 will definitely break some addons so for now, I'm back to the default UI. I want to see what's new with the UI anyway. 🙂
My UI is semi broken too sigh, I hope QL gets updated soon, I miss it and all its glory. PVP'ing is gonna be a bit funny, perhaps I'll just work on Love is in the Air achieves tonight.

"Minimalist" is actually a very, very subjective term. It's always a challenge to hide/show UI elements because there are so many different gaming styles. This weekend, I'm actually planning to use Kong with the default UI and see what I can live without. 🙂
Might as well run around alt+z'd 🙂

Over the week, I did not play with Kong as I planned to but instead used QulightUI (which now uses Filger). I loved it because I'm starting to see that it's an updated, modern replacement for ALZA. To test myself, I went back to my other UI "favorites" and surprisingly found them looking cluttered now.
Btw, I use Qulight with Aurora, DBM, AddonControlPanel, idQuestAutomation, Recount, and Zygor.
