OK so I am a new Hunter previously played a Rogue since Launch, but with cataclysm wanted something more challenging. Anyway I digress.
i downloaded, updated, and installed the GarUI - which is great BTW - but ever since then I have had an issue with my Objectives only showing 1 or 2 at a time instead of listing all the ones I am tracking. Anyone have any idea what the issue is or what add-on is causing it?

Not sure what the problem could be on this one, is everything updated? If you have the Curse client installed, make sure that all of the addons in the UI are updated. I personally use the UI as well, and am not having any problems with tracking quests.
I may be off the mark here, but there is an option to filter the display so it only shows tracked quests that are in your current region, or close by, or something like that. You can change these options by right-clicking on the Objectives heading.
