For all baby hunters out there... Omen! the obvious choice, but just for any one new, a basic threat meter.
You don't need too much when you're just starting out, but some addons that couldn't hurt would be:
MikScrollingBattleText
Quartz
Power Auras
FuBar w/ RepairFu and GarbageFu
Auctioneer
QuestHelper
None of these are essential, but MSBT, Quartz and Power Auras will be great later on. If you can start playing with them now and get used to configuring things, you'll find these addons can really help you in the higher levels.
FuBar has some handy plugins which make life easier, such as an auto-repair plugin and auto vendor-trash selling.
Auctioneer is tough to live without. Making G is so much more difficult without it.
Questhelper just makes leveling a breeze.

Forget both of these. Grab the addon Carbonite and you will be fine. Redesigned map for easy tracking. Quest helper. Directions. Enemy notification system. Punks and pals list. Wg timer on interface along with many other customizable information tabs on inferface. Its literally my favorite addon in existence because it has so many good things to offer.
Another one once you get into needing to check stats is Recount. Simple addon.
Always remember that addons eat up memory, so the more you run the slower wow will run. 🙂

I had heard awhile back that Carbonite's future development was in jeopardy due to Blizz's new addon policy. These new features make me want to check it out for sure. It requires a lot less memory than QuestHelper from what I recall.

It's Pitbull 4. It's still in development, but has most the basic functionality of Pitbull 3 and is easier to configure.
Petbar is nice. Adds extra barspace for your pet. Got to love it, now I can keep growl on my bar!

Easier to configuire,mm I dunno about that .I installed Pitbull 4 and my GAWD I was so lost.Maybie in the future you could put in a page or w/e to help get started or know of a site that could help first time set ups?Anyways just toying witht the idea of Power Aura,sounds like a neat and looks neat addon.On another note,you say that you use Bartenders?Now here is my question:How did you get the bars to look sleek and clean like in your screenshots?Mine look like crap compared to yours.I have a million questions about the hunter class due to being the second class I have played in my WoW years.I still read everything on your site that piques my instrest to learn more of the class.Anyways take care and look forward to your Blogs and Forum chats.

Power Auras is a very helpful addon for sure. My guess is that you need to d/l ButtonFacade and apply it to your bars. That will tidy them up a bit. There are different skins available too. The one I'm using is Apathy.
I've been meaning to create an in-depth post about my UI, along with a short vid explaining things. I started working on a brief UI vid a few months ago, but scrapped it for some reason. I think it may have had something to do with time and perhaps a couple of final adjustments I wanted to make.
I've spent the greater portion of my time playing WoW without the use of addons. Sometimes I think of going back to the default UI just to make life easier, but I have grown to like using quite a few addons. Once you start tailoring things to your needs, such as repositioning unit frames, it gets a little less comfortable using the stock UI. Not to mention, addons like Bartender make keybinding so much easier compared to using the Blizz interface.
What I am going to do though is try and eliminate any frill and go with a simplistic UI similar to the one I have now, but perhaps even more minimalist. Honestly though, an in-depth look at my UI is one of the items at the top of my agenda. Maybe now that this whole Worgen business is getting put to rest I can focus on something more practical and useful. 
Yes please!! show me how to get sexy action bars. Oh yeah, and your general chat interface looks sweet. Do tell sir, do tell. I have XPerl now just because i'm lvling a healer and want something to keep track of everything. A big question I also have for you gar, is I noticed you only have a couple spells showing on ur screen. Might I ask why? I guess you have the others key bound and can remember w/out looking what they are, but I was just like wow, no spells hardly on his screen. I want mine to look all sleek like that. 🙂
The various action bar icons I have shown are for cooldown purposes mainly. I have keybindings for all of my spells and abilities, so most of them are there to show me when things are available.
kk. so, what action bar tool are you using? bartender, dominoes, some other?
On a different note, xperl looked awesome when i was by myself doing dailies and such, but then i entered 10man os and everything went to crap. So cluttered and annoying, I deleted. So, I'm back to Grid+click for my healer and i'm digging it. Grid is also nice on roar just so i can keep up with who's offline, not ready, afk, etc. in the raid. 🙂
I never mentioned Zug Zug Huntar either. That one is really nice if you have the five points in improved tracker cause it auto switches your tracking to your target's race/class/thingy. 😀

Pitbull 4 can be pretty cool for raid frames if you want to spend the time configuring them, but Grid is pretty much ready to go "right out of the box".
Tracking switch addons aren't necessary, as Improved Tracking works vs. all included mob types as long as you're tracking one of them.
